  • 1 cup full-fat canned coconut milk, chilled
  • 1/2 cup coconut water or filtered water
  • 1-2 tablespoons pure maple syrup, to taste
  • 1 tablespoon fresh lime juice from about 1/2 lime
  • 1/2 teaspoon vanilla extract
  • Ice cubes, for serving
  • Optional Garnish: Fresh mint sprigs, lime slices, or whole strawberries

Method
 

  1. Gather and prep your ingredients. If using fresh strawberries, rinse them well and remove the green tops.
  2. Place the strawberries, canned coconut milk, coconut water, 1 tablespoon of maple syrup, fresh lime juice, and vanilla extract into a high-speed blender.
  3. Secure the lid and blend on high for 45 to 60 seconds, until the mixture is completely silky smooth and a uniform blush-pink color.
  4. Carefully taste the refresher. Adjust sweetness by adding more maple syrup, or add another squeeze of lime juice to brighten the flavor. Pulse the blender once more to combine.
  5. Pour the refresher into tall glasses filled with ice. Garnish with a fresh strawberry on the rim, a slice of lime, or a sprig of mint, and serve immediately.

Notes

For the best results, use ripe, sweet strawberries and ensure your coconut milk and water are chilled beforehand. The lime juice is crucial for balancing the richness of the coconut milk. For variations, try adding a handful of fresh mint for a cooling flavor, a scoop of vanilla protein powder for a post-workout boost, or stir in 1-2 tablespoons of chia seeds after blending to create a thicker texture.
